Wild Tuna Salad Nicoise

Tuna Salad Nicoise is a very easy dish that can be quickly prepared for lunch or dinner.  This is one of my favorite go-to lunch recipes because of the combination of the ingredients that keep me satisfied in the midst of a busy work day.  Nicoise is french for “from and of Nice”.   Nice (pronounced like “niece”) is the city located in the south of France, where this salad originated.  When I make this simple dish, I often think of a bright sunny day sitting outside somewhere people watching while eating this delicious salad and having a glass of a light white wine or some lemony carbonated water.

Steamed string beans mix very well with the boiled eggs and tuna.  You also have a nice assortment of vegetables that blend so well together. I literally ate this salad every single day that I was in France. I never tire of its delicious simplicity and it happens to be so good for you.

I love the famous quote by Albert Einstein who says,”Everything should be simple as possible but not simpler.”

Quick Tuna Salad Nicoise

The key, however, is in the dijon mustard vinaigrette. I can’t get enough of it.  I love this dressing!

The proportion of dijon mustard and red wine vinegar is 1 to 2.  Any more mustard and the dressing may turn out bitter and pungent.  I like the dijon mustard that has the whole mustard seeds mixed in.

This recipe is packed with protein, vitamins and minerals in this one salad making you feel full and complete.

Wild Tuna Salad Platter

I would recommend using as many organic ingredients as possible for a healthier meal plus using wild canned tuna or freshly cooked wild tuna.

Wild Tuna Salad Nicoise Recipe:

Preparation Time: 15 Minutes        Prep Time: 10 Minutes         Cooking Time: 5 Minutes       Serves:  2 people

In a tray, line up the sliced carrots, red lettuce, red tomatoes, wild canned or cooked tuna, steamed string beans and hard boiled eggs.  For the dressing, in a small bowl, add dijon mustard, red wine vinegar, thyme, sea salt and crushed black pepper and mix slowly.  Then add the extra virgin olive oil mixing slowly as you pour.  (I add a half a clove of raw diced garlic into the dressing for an extra kick but this is entirely up to you).

Ingredients:

-2 hard boiled eggs

-2 cans of wild tuna or 4 ounces of freshly cooked wild tuna

-2 cups of steamed string beans

-2 diced tomatoes

-2 carrots cut and sliced

-2 cups of cut red lettuce

-1 teaspoon dijon mustard

-1 tablespoon of red wine vinegar

-1/2 clove of diced garlic

-1/4 teaspoon of thyme (dry or fresh)

-2 table spoons of extra virgin olive oil

-1/4 teaspoon of sea salt

-1/4 teaspoon of crushed black pepper
