Pasta with sauce made of squash and mushrooms is creamy and slightly sweet. It gives the pasta a lightness to it in addition to a vibrance from its lovely bright orange color. In this recipe, I’ve taken flat noodle pasta with squash, enoki mushrooms, and chickpeas for a full delicious meal. All the ingredients seem to work well together. Especially chickpeas with the cream of squash. This pasta is really easy to make. It takes less than 20 minutes and I did admittedly put it together with some left overs. You can too. Use mushrooms in your fridge or any other vegetable like greens and mix it with this pasta and chickpeas. It is packed with nutrition and at the same time satisfies my craving for comfort food.
Pasta is some of the most delicious and the easiest dishes to cook up. They flavor well with just about anything and you can count on making a good pasta dish with whatever you have in your fridge. I would be very surprised if you didn’t have dry pasta in your pantry. In my cubbard you can find – penne pasta, spaghetti, angel hair, egg noodle, flat noodle, tortellini and macaroni. I continue this wintery journey with squash. I can’t get enough of the creamy, slightly sweet and brilliantly colored veggie that I add into pastas, salads, stews, soup, you name it. As you continue to stay warm, keep in mind that comforting foods can be really good for you and satisfies in a very soulful way. The body can feel good from a delicious, well balanced meal and keep you healthy at the same time.
Squash is highly nutritious with especially large amounts of vitamin A and minerals. You can always count on them to provide you with you a nice glowing skin. Total Time: 17 Minutes Prep Time: 7 Minutes Cooking Time: 10 Minutes Serves 2-3 People
In a blender, add large pieces of squash, coconut milk, garlic cloves, sea salt, and thyme.
Place the blended sauce into a sauce pan and simmer for 7 minutes in low heat.
Add a can of organic chick peas and enoki mushrooms in to the sauce.
In another sauce pan, cook the flat noodle pasta for 7 minutes.
Mix the pasta into the sauce.
Top with some parmesan or vegan parmesan and it’s ready to serve.

1 teaspoon of sea salt
1 teaspoon of raw coconut sugar
1 teaspoon of dried thyme
1 can of organic chick peas
1 package of organic enoki mushrooms
1/2 package of flat noodle pasta
