I decided to make healthy and fresh, vegetarian tacos at home. It can taste amazingly good and healthy too! I’ve incorporated healthier options as beans and organic tofu. After testing what could be a good replacement for those delicious street tacos I’ve had in Mexico, I chose minced tofu, marinated, with some deletable spices like paprika, cumin powder, onions, black pepper, vinegar and salt. Then sauteeing the marinated minced tofu until nicely browned. It’s optional but I would also saute sliced onions separately so that it gives the tacos a sweet yet substantial flavor. It nicely satisfies my cravings for tacos!
Many of us have cravings for those delicious, not so good for you, street tacos. Especially living in Mexico City for awhile, I got accustomed to eating tacos all the time. My favorite tacos are the “al pastor” style, the original Arabic version, where the meat is nicely marinated and slowly cooked while spinning on a vertical rotisserie. It seemed as if virtually every other block in the city had a tacos “al pastor” rotisserie. You can smell the aroma of charcoal grilled flavors of spices, grilled onions and jalapeno peppers everywhere you went. You can also hear the metal spatulas hitting the grill, tossing the thinly sliced onions back and forth. The small sized tortillas placed in the hand and with one swoop, small chunks of “al pastor” meat are cut and quickly tossed to the center of the tortilla. The cooked onions are then added along with some red salsa, more peppers, cilantro and at times pieces of pineapple. All this in about 6 seconds. I counted…..
Mexican salsa is made in hundreds of different ways with various chiles that make your head spin. They are usually prepared fresh and I love them all.
With these homemade vegetarian tacos, I made some fresh salsa with arbol chiles, tomatoes, garlic, cilantro, lime and some fresh red bell pepper. Amazing! It goes so well with these tacos!
These marinated tofu tacos are easy and quick to make. The flavors are out of this world especially by adding some avocado and some crunchy purple cabbage. Enjoy!
Total Time: 25 Minutes Prep Time: 10 Minutes Cooking Time: 15 Minutes Serves: 4 People
Mince the tofu on a chopping block.
In a large bowl, prepare the marinade by adding the organic apple cider vinegar, paprika, oregano, cumin powder, sea salt, onion powder, and black pepper.
Mix well and pour the tofu into the bowl and blend.
Let it marinade for 5 minutes.
Slice red cabbage
Sprinkle some sesame seeds
Blend red bell pepper, garlic, tomatoes, dried chile arbol, cilantro, sea salt, and lime in a blender.
2 blocks of organic firm tofu minced
2 1/2 tablespoons of organic apple cider vinegar
2 tablespoons of paprika
1 tablespoon of dried oregano
2 tablespoons of cumin powder
1 1/2 teaspoon of sea salt (salt to taste)
1 teaspoon of onion powder
1 teaspoon of black pepper
4 avocados sliced
1/2 a small red cabbage sliced
1 red bell pepper
1 bunch of cilantro
1-2 cloves of garlic (optional)
1 teaspoon of sea salt
5 chile arbol
2 tablespoons of water
