When preparing our feasts for the family during the holidays, often times we focus on the main dish and not pay much attention to those side dishes. I think those side dishes appropriately deserve some credit. This carrot salad with cilantro is among my favorite side dishes for the fact that the sweet lime dressing, chopped cilantro and cut carrots combined, is a winner.
I typically call any food a side dish if protein is missing on the plate. My body craves a lot of protein whether it is from meat or from vegetarian sources. So poultry such as marinated turkey or chicken goes really well with citrusy and herby carrots. I love this orange root vegetable as long as it is not served by itself. It deserves to be combined or blended with herbs, noodles, wraps, coconut milk…..something.
Everyone can do with a bit more carrots in the diet. Wouldn’t you agree? I won’t be pondering on the next big carrot recipe but nutritiously and taste wise, it deserves a good mention. Don’t be surprised if you see some future posts of veggie wraps and some warm hearty soup listed featuring, yes, “carrots”.
Packed with vitamin A, carrots are so essential for our eyes and liver. For this very reason, more of this bright veggie is warranted. This blog reminds me of my favorite cartoon growing up, Bugs Bunny. This clever character was famous for his line “Ehhhh, what’s up doc?” while munching on a carrot. His two front teeth always reminded me of my own – quite large. I don’t munch on carrots much although a good dose of it goes into my cooking on a weekly basis.
The interesting part of carrots is that the consistency of it, raw, is so vastly different than when cooked. A crunchy carrot salad complements that meat or meatless dish. I find that when cutting vegetables into different shapes, depending on the type of dish, makes cooking and preparing more fun and visually appealing.
See what you can do with this side dish. It’s so easy to make and delicious. I would give it about 10 minutes to prepare the dressing and slice up the vegetables, then onto a plate.
Preparation Time: 10 Minutes Cooking Time: 0 Minutes Serves: 4 People
-Cut 6 carrots into thirds then proceed to cut each pieces into thin sticks.
-Place the cut carrots into a large salad bowl for mixing.
-Finely cut raw purple onion (optional) and toss into the bowl.
-Chop some cilantro and toss them into the bowl.
-For the salad dressing, add lime juice into a small bowl.
-Then add olive oil, honey, sea salt and black pepper.
-Mix the dressing with a spoon.
-Pour the sweet lime dressing into the salad bowl and mix all the ingredients together.
-Serve on a large plate or tray.
-6 organic carrots
-1/2 a purple onion
-a handful of cilantro
-1 whole lime
-1 teaspoon of honey
-1 1/2 table spoons of olive oil
-1/2 teaspoon of sea salt
– 1/4 teaspoon of black pepper
Voila! It was so easy and it tastes so good!
