Egg and Avocado Salad With Chia Seed Dressing

 

Today I would like to share with you a really yummy salad with my favorite foods of course, eggs and avocado.  There are so many ways that you can make up a dish with these two ingredients and since I don’t eat salad all that much, I consciously add as much raw vegetables that I could to get a full nutritious meal out of it.  This salad looks low key yet it’s a super food recipe packed with all the healthy fat, protein and the antioxidants you need.

Egg and Avocado Salad

I am sure the notion of adding chia seeds into a salad doesn’t sound appetizing perhaps.  Yet it’s a great idea when you don’t feel like having the typical smoothie or the chia seed and yogurt.  Chia seeds actually add a nice texture to the salad.  By blending soaked chia seeds into this Asian salad dressing the seeds pick up all the flavors since they are neutral in nature.

Taro roots cut into raw fries is a nice healthy addition as they are a bit starchy yet sweet, crunchy and buttery when eaten raw.  I am quite surprised with its adaptable form; there is so much you can do with fresh taro roots aside from making them into processed boba and taro noodles.  It goes really well with curries as well as many other Asian dishes.

My favorite raw ingredients of taro roots and avocado have been paired together.  You do not have to incorporate those exact ingredients.  The main ingredients in this recipe are the egg, avocado and the chia seed dressing.  It’s easy and takes about 12 minutes to make this wonderful nutritious salad.  Use a good knife and slice up those fabulous raw vegetables you crave!  Add some chili flakes if you like it spicy!

 

Total Time:  15 Minutes     Prep Time:   8 Minutes     Cooking Time:  7 Minutes     Serves:   2 People

Poached egg:

In a sauce pan, bring water to a boil then lower the heat.

Once the water settles down, crack the eggs and allow them to sit gingerly in the water almost floating.

Allow the eggs to cook for about 4 to 5 minutes to get the yolk nice and runny in texture.

On a plate, set the vegetables:

Set all the sliced veggies and the eggs on to a plate.

Pour the chia seed dressing over the salads or place them to the side of the plate.

Use chopsticks or a fork.  It’s ready to eat.

Ingredients:

8 Sliced mushrooms

1 sliced avocado

1 bunch of baby purple lettuce or green lettuce

2 sliced taro root

2 sliced carrots

1 sliced green onions

1 tablespoon of toasted sesame seeds

1 teaspoon of dried chili flakes

Chia Seed Dressing:

add 2 table spoons of rice vinegar

add 2 table spoons of soaked chia seeds

add 1 tablespoon of sesame oil

add 1 teaspoon of liquid aminos or soy sauce

add 1 teaspoon of honey or raw coconut sugar

add 1/4 teaspoon of lemon zest

add 1/4 teaspoon of wasabi  (optional)
